How to make Beet Kvass

Beet kvass is a fermented drink that is easy to make at home. Here are the basic steps to make beet kvass:

  • Shoot for locally sourced, organic beets from the farmers market. But any beets will do. 
  • Wash and chop beets into small pieces. Enough to fill up half your mason jar. It’s optional to peel them. I do because I eat them after and like them better that way, but you don’t have to.
  • Place the beet pieces in a clean mason jar, leaving some space at the top. Add 1-2 teaspoons of salt. (Optionally add flavorings, such as ginger, garlic, lemon, or herbs.)
  • Fill the jar with filtered water, leaving about an inch of headspace. Shake to dissolve the salt and release some juices from the beets.
  • Cover the jar with a lid, a cheesecloth, or a coffee filter. Secure it with a rubber band or a metal ring.
  • Place the jar in a dark and cool place, such as a pantry or a cupboard.
  • let it sit for 3-5 days, shaking the jar daily. Burping the jar every other day (opening the lid) It should have a tangy and earthy flavor and a deep red color.
  • When the kvass is ready, strain out the beet pieces and transfer the liquid to another jar or bottle. Store the kvass in the refrigerator. For a more complex flavor allow your beet kvass to age in the fridge for a few weeks. You can also reuse the beet pieces for another batch of kvass, or add them to salads or soups.
  • Enjoy your beet kvass as a daily tonic, or use it in other recipes.
